Tofu is brilliant at disappearing into a dish. It can become crisp and savoury, silky and sweet, or creamy enough to pour over ice. Yet many people still buy a block, stare at it in the fridge and wonder what on earth to do next.

Recipe 1: Silken-Tofu French Toast

The quiet hero here is silken tofu. Blended with plant milk, vanilla and spice, it becomes an egg-free custard that coats day-old bread beautifully. Cook it patiently over medium heat for a crisp, golden outside and a tender centre.

Ingredients

  • 150 g silken tofu, drained
  • 160 ml unsweetened calcium-fortified soy milk
  • 1 tablespoon pure maple syrup, plus extra to serve
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon, plus extra to serve
  • A small pinch each of nutmeg and salt
  • 1 teaspoon cornflour (cornstarch), optional
  • 4 thick slices day-old bread
  • 1-2 teaspoons neutral oil or vegan butter
  • Fresh berries, to serve

Method

  1. Place the silken tofu, soy milk, maple syrup, vanilla, cinnamon, nutmeg, salt and cornflour, if using, in a blender. Blend until completely smooth.
  2. Pour the mixture into a wide, shallow dish. Dip each slice of bread into the custard, turning once. Let the excess drip away; a brief soak is enough for soft bread, while a sturdy day-old loaf can take a little longer.
  3. Heat half the oil or vegan butter in a non-stick frying pan over medium heat. Add two slices and cook for 3-4 minutes on each side, or until deep golden and set at the edges. Repeat with the remaining slices.
  4. Serve straight away with berries, a dusting of cinnamon and a light drizzle of maple syrup.

Kitchen note: Choose bread labelled vegan if that matters to you, as some loaves contain milk, honey or egg. Tofu and soy milk are common allergens.

Recipe 2: Chilled Coffee-Flavoured Tofu Milk

Coffee-flavoured tofu milk: cool, creamy and easy to adjust to your taste.

This is part breakfast drink, part afternoon pick-me-up. Silken tofu gives the milk body and protein without the need for dairy. Start with less sweetener, taste, and add more only if needed.

Serves 2 | Prep: 5 minutes | No cooking

Ingredients

  • 200 g silken tofu, chilled and drained
  • 400 ml chilled water
  • 2 teaspoons instant coffee dissolved in 2 tablespoons hot water, then cooled
  • 1-2 tablespoons pure maple syrup or sweetener of choice
  • 1/2 teaspoon vanilla extract
  • A tiny pinch of salt
  • Ice cubes, to serve

Method

  1. Add the silken tofu, chilled water, cooled coffee, maple syrup, vanilla and salt to a high-speed blender.
  2. Blend for 45-60 seconds, until silky and lightly frothy. Taste and adjust the coffee or sweetness. Add a splash more water for a lighter drink.
  3. Pour over ice and serve immediately, or refrigerate in a sealed bottle for up to 24 hours. Shake well before drinking, as natural separation can occur.

Caffeine note: Use decaffeinated coffee for a caffeine-free version. People who are pregnant, breastfeeding, sensitive to caffeine, or managing a medical condition should follow advice from their health professional. Keep chilled and do not leave the drink at room temperature for extended periods.

Is Tofu Healthier Than Animal Products?

Where tofu shines

  • Complete plant protein. Soy contains all nine essential amino acids, making tofu an unusually versatile source of high-quality plant protein.
  • A heart-friendly swap. Tofu is generally low in saturated fat and contains unsaturated fats. Australia’s Heart Foundation lists tofu among the protein choices to prioritise.
  • No dietary cholesterol. As a plant food, tofu contains no cholesterol. That does not make every tofu dish automatically healthy, but it can improve the overall protein package when it replaces fatty or processed meat.
  • Useful minerals, with a label check. Tofu can provide iron and, when set with calcium salts, meaningful calcium. Amounts vary widely by brand, so read the nutrition panel.
  • Flexible and minimally processed. Plain tofu can move from stir-fries and scrambles to desserts, sauces and drinks without relying on highly processed meat substitutes.

The comparison that matters most

Replacing bacon, sausages or a fatty red-meat meal with tofu is a very different health decision. The strongest practical case for tofu is as one more wholesome protein choice, especially when it helps reduce red and processed meat. 

There is also no need to fear ordinary soy foods because of internet claims about “hormones”. Soy isoflavones are not the same as human oestrogen. Cancer Council Australia says the available evidence does not suggest soy foods need to be avoided, including by breast cancer survivors, while also noting that evidence is not strong enough to recommend soy specifically for cancer prevention. Whole soy foods and concentrated isoflavone supplements should not be treated as interchangeable.

A Small Ingredient with a Surprising Range

Perhaps tofu’s greatest strength is not that it replaces every animal food. It is that it gives us more choices. It can make breakfast creamy without dairy, bind French toast without egg, soak up the flavours of a savoury dinner, and turn into something sweet when the mood calls for it.
